Recipe Box: Banana Nut Bread
At the Bridgestreet House I always include a homemade baked item for breakfast. My guests love this Banana Nut Bread, so here is the recipe. And by the way, I don’t own an electric mixer anymore, so I hand mix all the ingredients.
1 ¾ cups all-purpose flour
1 ¼ teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
1/3 cup shortening
2/3 cup sugar
2 eggs
2 tablespoons milk
3 mashed bananas
Handful of chopped walnuts
Preheat Oven to 350º
Grease a loaf pan. You may also use Baker’s Secret which is a spray found in the bakery aisle of most grocery stores. This is a product that combines the shortening and flour in a spray form. It really works well if you have trouble removing your baked goods from the pan.
In a plastic bag (so you don’t have to mess another bowl) combine flour, baking powder, baking soda and salt. Set aside.
Cream together shortening and sugar. Add one egg and blend. Add the second egg and blend. Add the milk.
Alternately add the flour mixture and mashed bananas then finally the chopped walnuts.
Place in the greased loaf pan and bake for 60 to 65 minutes. Let cool and then flip it over on a clean surface or liner such as wax paper or foil. Serve and enjoy!

Donna is a wonderful baker. Prior to becoming an Inn keeper, she would regularly treat us to her baked delights. We miss her and want her and her treats to come back to work!
